Chicken Romanesco Tots
These crispy, cheesy Chicken Romanesco Broccoli Tots are packed with protein and vegetables, making them a delicious option for toddlers and the whole family. They’re easy to prepare, freezer-friendly, and perfect for lunch, dinner, or snacks.

Ingredients:
Makes 13 (1.5inch) tots
- 1 cup romanesco broccoli florets, steamed
- 1/2 cup grated Le Gruyère cheese (or low-moisture part-skim mozzarella also works)
- 3 oz chicken thighs, ground
- 1 egg
- 1/2 cup plain breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- pinch of mineral salt
- oil (for coating)
Instructions:
- Preheat the oven to 385°F (196°C) and line a baking sheet with parchment paper.
- Add the steamed romanesco broccoli to a mixing bowl and mash with a fork until finely broken down.
- Add the grated cheese, ground chicken, egg, breadcrumbs, garlic powder, onion powder, black pepper, and salt. Mix until well combined.
- Shape the mixture into 13 tot-sized pieces and place them on the prepared baking sheet.
- Lightly brush or spray the tots with oil.
- Bake for 20 minutes, or until lightly golden.
- Check for doneness by inserting a meat thermometer into the center of a tot. The internal temperature should reach at least 165°F (74°C).
- Let cool for a few minutes before serving.
