Kale-Spinach-Pear Waffles

There’s something so comforting about blending greens, fruit, and grains into a warm waffle. I made these one quiet morning while my little one played nearby, the kitchen filled with that soft, sweet smell of pear and maple syrup. These waffles come out fluffy, just lightly sweet, and full of good things. They freeze beautifully too, so there’s always something nourishing ready for busy mornings.

Ingredients
Makes about 40 (1-inch) waffles, or 8 (4-inch) waffles
  • 1 cup organic unbleached all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup packed spinach
  • 6 small kale leaves
  • 1 ripe pear
  • 1/4 cup cooked mix of red/green lentils, millet & buckwheat
  • 2 tbsp ricotta cheese
  • 2 tbsp maple syrup
  • Cream cheese & Jam (optional, for serving)
  • Coconut oil (optional, for greasing the waffle maker)

Instructions

  1. Add everything into a blender and blend until smooth.
  1. Preheat and lightly grease your waffle maker.
  2. Pour in the batter and cook until golden.
  3. Let cool slightly before serving.

Notes

  • Naturally sweetened with pear & maple syrup.
  • Perfect for both adults and little ones.
  • Freeze leftovers and reheat in a toaster for a quick breakfast.
