Maple Nutty Banana Bread (No Refined-Sugar)

There’s nothing better than the smell of freshly baked banana bread filling the kitchen. It’s the perfect cozy loaf for breakfast, an afternoon snack, or lunchboxes, and a delicious way to use up those overripe bananas sitting on your counter.

Makes 9×5-inch loaf

Wet ingredients:

  • 3 (very) ripe bananas
  • 2 eggs
  • 1/4 cup avocado oil
  • 2 tbsp melted unsalted butter
  • 1/4 cup pure maple syrup
  • 1/4 cup half n half (or whole milk)
  • 2 tsp vanilla extract

Dry ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp ground flaxseeds
  • 1 tsp baking soda
  • 1/2 tsp mineral salt
  • 1/2 tsp cinnamon
  • 1/2 cup finely chopped walnuts
  • 1/4 cup finely chopped pecans

Topping:

  • extra finely walnuts & pecans

Instructions:

  1. Preheat the oven to 325°F (163°C). Lightly grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together all wet ingredients until smooth and well combined.
  3. Continue to add dry ingredients. Gently fold the ingredients together just until no dry flour remains. Be careful not to overmix.
  4. Fold in the finely chopped walnuts and pecans until evenly distributed.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Sprinkle with additional chopped walnuts and pecans.
  7. Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  8. Allow the banana bread to cool completely in the pan before slicing and serving

Storage Tips

  • Room Temperature: Once completely cooled, store the banana bread in an airtight glass container or wrap it in unbleached parchment paper and place it in a bread box or reusable container. It will stay fresh for up to 3 days.
  • Refrigerator: Store in an airtight glass container for up to 1 week. Let it come to room temperature or warm a slice slightly before serving for the best texture.
  • Freezer: Slice the loaf and separate each piece with unbleached parchment paper. Store the slices in a reusable silicone freezer bag or a freezer-safe glass container for up to 3 months. Thaw at room temperature or warm gently before enjoying.
