Carrot-lentil Cheesy Bites

These soft, cheesy bites are packed with carrots, lentils, quinoa, and two kinds of cheese for a delicious, nutrient-dense snack or meal. They’re easy to make, freezer-friendly, and perfect for little hands.

Ingredients:

Makes about 25 (1.5-inch) balls
* 1/2 cup grated carrots
* 1/2 cup grated mild cheddar cheese + mozzarella
* 1/3 cup cooked tricolor quinoa + lentils
* 2 eggs
* 1 cup Panko breadcrumbs
* 1/2 tsp garlic powder (optional)
* Pinch of salt (optional)


Instructions:

  1. Preheat the oven to 385F
  2. In a large bowl, add all ingredients and mix until evenly combined.
  3. Scoop small portions (1 tbsp) and gently roll into mini balls.
  4. Bake at 385F for 15 minutes until set but still soft.
  5. Let cool for a few minutes before removing. Serve warm.
