Carrot-lentil Cheesy Bites
These soft, cheesy bites are packed with carrots, lentils, quinoa, and two kinds of cheese for a delicious, nutrient-dense snack or meal. They’re easy to make, freezer-friendly, and perfect for little hands.

Ingredients:
Makes about 25 (1.5-inch) balls
* 1/2 cup grated carrots
* 1/2 cup grated mild cheddar cheese + mozzarella
* 1/3 cup cooked tricolor quinoa + lentils
* 2 eggs
* 1 cup Panko breadcrumbs
* 1/2 tsp garlic powder (optional)
* Pinch of salt (optional)
Instructions:
- Preheat the oven to 385F
- In a large bowl, add all ingredients and mix until evenly combined.
- Scoop small portions (1 tbsp) and gently roll into mini balls.
- Bake at 385F for 15 minutes until set but still soft.
- Let cool for a few minutes before removing. Serve warm.
