Vietnamese Ginger Braised Chicken

This simple Vietnamese-inspired dish comes together with just a handful of pantry staples, making it perfect for busy weeknights. Serve it over warm jasmine rice for a comforting meal the whole family will love.

Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1–2 tbsp avocado oil (or neutral oil)
  • 1/4 cup diced sweet onion
  • 3 knobs fresh ginger, julienned
  • 3-4 Thai pepper (optional)
  • Seasonings
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp ground black pepper
  • 2 tbsp coconut sugar
  • 3 tbsp Red Boat fish sauce

Instructions

  1. Heat avocado oil in a large skillet over medium heat.
  2. Add diced onion and julienned ginger. Sauté for 2–3 minutes, until fragrant and the onion begins to soften.
  3. Add chicken and stirring to coat it with the aromatics.
  4. Sprinkle in garlic powder, paprika, black pepper, coconut sugar, and fish sauce. Stir until the chicken is evenly coated.
  5. Reduce the heat to medium-low and let the chicken simmer, stirring occasionally, until the chicken fully cooked and the sauce has reduced into a glossy glaze, about 20–25 minutes.
  6. Toddler Tip: Set aside a portion for toddlers before adding chilies 🌶️
  7. Stir in Thai chilies during the last 2–3 minutes of cooking, if using.
  8. Serve hot over steamed jasmine rice.
