Purple Sweet Potato Waffles
Soft, lightly sweet, and naturally colorful, these purple sweet potato waffles are made with simple ingredients and come together in minutes. They’re delicious on their own or served with fresh fruit and yogurt.
Ingredients
Makes 4 (4-inch) waffles
* 1/4 cup purple sweet potato, steamed & smashed
* 1/4 cup plain whole-milk yogurt
* 1 egg
* 1 tbsp real maple syrup
* 1/2 tsp baking powder
* 1/4 cup organic GF sprouted oat flour
* 1 tbsp unsalted butter (for greasing)

Instructions:
1. Blend or mash sweet potato until lump-free.
2. Whisk in yogurt, egg, and maple syrup
3. Add in oat flour, baking powder and mix until just combined. Batter should be thick, not runny (thicker = crispier).
4. Preheat waffle maker.
5. Lightly grease plates.
6. Cook until steam mostly stops and edges look set + lightly golden.
7. Carefully remove and let waffles sit uncovered for 1–2 minutes, they crisp as they cool.
